The Essential Everything’s Bella Levedag Shares Her Winter Brussels Sprouts Salad Recipe

With winter in full swing, there’s nothing we find ourselves wanting more than healthy, hearty comfort food. While we’re making—and eating—it, we’ll pretend we’ve teleported to a ski chalet somewhere…because that’s what people who are hunkered down and riding out a pandemic do. To help us cope with the current state of affairs and indulge all of our current culinary cravings, Bella Levedag of The Essential Everything is graciously sharing some of her favorite winter recipes with us. Today, we’re making a delicious Brussels Sprouts Salad with bacon, hazelnut, and pomegranate.

For the dish, Bella harvested the Brussels sprouts from her garden. “All cabbages are so healthy for us,” she says. “They have an incredibly high amount of Vitamin C, which is just what we need during the winter season. I like to think of the idea of Umami in my dishes—I incorporate different textures and love the interplay of sweet, sour, fruity, meaty, soft, and crunchy.”

Bella, who started The Essential Everything at the end of March in the midst of the first Covid-19 lockdowns, was taught how to cook by her mother. The first meal they made together was a semolina pudding, when she was only three years old. “Being an only child to a single mother, a lot of time was spent in the kitchen, preparing meals together,” Bella says. “Cooking and eating were always very celebrated in my mother’s home.”
